I really love the effect of the mosaic crochet technique.
If you've never tried it really is a simple technique.
The rounds are made up of sc's that are worked into the back loop of the st you are working on, which leaves the front loop of that st available to work a dc into. The dc will be worked into the front loop of the row below you are working on, the dc you are making and the row below is the same color, so it's easy to know where you are working into.
Hat size we are making is small to medium adult,
if you want a larger hat, add 4 more rows to hat band and make sure to inc with 2 st's in set up round of hat.
if you want a larger hat, add 4 more rows to hat band and make sure to inc with 2 st's in set up round of hat.
The hat is made from the bottom and up wards.
Here is the grid we will be using, it has a st repeat of 6, I've included 3 free st's at the beginning and end of each round which is not counted in the grid pattern.
You will be repeating (after the 3 free st's) st's 1 to 6 and work 8 rows high.
There will be a slight separation until you make the grid again, the same way as you did before.
Then an extra row will be worked followed by the decrease rows for the top of the hat.
This hat can be made in many sizes, from new born to large adult using a stitch count in multiples of 6.
You can also use a thicker yarn and larger hook.
Once
the band has been made and joined for the size of your hat, the 1st row of the body of your hat will be adjusted for the pattern
stitch count.
Here is an example of a smaller hat, I made the hat edge for 52 rows, once joined and as I was making the first row, I inc 2 st's in that round to get up to the count of 54 st's to make a juniors hat, aged 4 to 10 approx.

Suggested Materials needed:

5mm
Stitches used:

Stitches used:
ch = chain
sc = single crochet
sc = single crochet
bl = back loop
hdc = half double crochet
hdc = half double crochet
dc = double crochet (all dc's will be worked into the front loop of 2 rows below)
dec = decrease
dec = decrease
inc = increase
Special Stitches:
dc in the front loop of 2 rows below (when you do this, you will skip over the st that now sits behind the dc you just made, we don't want to make extra st's)
To Begin:
Make the band/brim
Ch 9
Row 1. work 1 sc in 2nd ch from hook and in each ch across, ch 1 and turn (8sc)
Row 2. work 1 sc into the back loop of each sc, ch 1 and turn (8sc)
continue working row 2 until you have 57 rows, once the band is joined with a row of sl st's, you will have 58 rows.

Join band into a circle.
Leave yarn attached, ch 1 and sl st to join using the back loops
of the last row made and the unworked loops of the beginning chain row.
TIP: Do not join too tight as it may pucker.
I used blue for round 1 of the blue brown hat/I used grey for round 1 of the grey and white hat, I wish I had used white, so I would recommend the contrasting color to begin with in round 1.
I have made a video tutorial
for the head band
here it is
Set up round (inc this round by 2 more st's any where in the round)
Ch 1, work 1 hdc in each row end, to end, sl st to join round. 60 st's
(begin working grid pattern) all st's are now worked into the back loop only (not the 3rd loop of the hdc of the last round)
Round 1 (Change Color): Ch 1, work 1 bl sc in each st of the round, sl st to join and change color
Round 2 Ch 1, work 1 bl sc in each sc of the round, sl st to join and change color
Round 3 Ch 1, work 1 bl sc in each of the next 3 sc (this is the free space I mentioned/no pattern) *work 1 bl sc in each of the next 5 sc, work 1 dc into the front loop of the st 2 rows below* repeat from *to* to the last 3 st's, work 1 bl sc in each of the next 3 sc, sl st to join and change color
Round 4 Ch 1, work 1 bl sc in each of the next 3 sc, *
